A Diet Grounded in Substitution is Not a Diet

Not sure how stevia came up today, but it was over a lunch conversation with a friend.  We may have been talking about coffee habits beforehand, how I most often use the sweetener.  The conversation quickly evolved to “fake food” (or heavily processed – and yes – to the taste buds, stevia would be fake sugar) versus natural (to be taken with a grain of salt, as arsenic is natural as well).  While making supper tonight, I thought more about what I said and wanted to say about vegan food.
